Light Fruit Cake
This is a little experimental light fruit cake. It contains:
- Banana
- Apple
- Walnuts
- Dates
- Raisins
- Gluten-free flour
- Coconut oil
- Eggs 2
It is gluten-free and sugar-free.
I don’t list the quantities because I don’t really know how much I used. I sprinkle the ingredients in until it looks right.
Ingredients Breakdown
The fruit provides the sweetness and some texture, while the walnuts add more texture, including some crunch.
The gluten-free flour provides body around the fruit. The coconut oil gives the mixture moisture and the eggs hold it all together.
I spread a generous layer of butter when serving! It was dairy-free until I served it with butter!
